How To: Blueberry Pancakes

A few people have asked me how I turn bananas and fruits and nuts into pancakes. It's so easy it makes me laugh.  So here's my attempt to teach you my favorite raw recipe ever. This is my adapted version from Mimi Kirk's cookbook.  Mine is easier.  ;-)  

Try it!  You will LOVE IT!!

Tools you will need - a bowl, spoon, measuring cup, dehydrator or oven on low temp. (200 degrees with door cracked)

Food you need for 2 servings - 2 bananas, 1 cup of blueberries, 1/3 cup walnuts.  (I eat the whole recipe with a bowl of fruit.) 


Step one & two - Break up the bananas in a bowl.  Add crushed nuts to it. 


Step three --- Smash the bananas and nuts. 

Step four -- Gently fold in blueberries 

Step Five -- drop the mixture by the spoonful into rounds onto a dehydrator sheet. 

Dehydrate overnight on 115. You can flip them in the morning if you want.  And let them dry for a few minutes on the other side. I'm all about easy though...I rarely flip mine. I can't be bothered with all that. It's bad enough they take 6-8 hours to "cook". Lol 

You can also try this in a low temperature oven.  I haven't.  But I'm sure it would would work just fine.  Try baking for 30 minutes to and hour on 200 with the door cracked. 

Serve with maple syrup, honey, and a sprinkle of cinnamon or nutmeg or both!

Here's a tip: Get a cheap dehydrator online. A round one is fine. You don't need a $300 Excalibur.  I don't have one and I make out fine without it. If you get a dehydrator it will make eating healthy a lot more fun for you.

  1. I have a dehydrator, but have never used it. Yes, shame on me! Please give us more recipes for the dehydrator. I promise I'll take it out and start using it.
