Summertime Cheap Picnic Recipe

One of my favorite traditional picnic foods is potato salad.  You can't get cheaper than potatoes for a healthy, whole, clean carb.  

This recipe is sure to please your crowd or yourself.  And it's so easy, even I can't believe it!


To make this creamy delight you will need some medium to small red or golden potatoes.  I just buy a bag. It's cheaper.  A bag of potatoes is about $5. 

You will also need a bottle of this dressing.  The dressing will set you back $3.49-$4.99 depending on where you buy it.  A little pricier than mayo but TOTALLY worth it. 



I put 2-4 potatoes per person being served in a steamer and cook for about 45 minutes. (The number you use depends on if they are medium or small potatoes.  You can also boil the potatoes if you don't have a steamer.)

Set the potatoes on a rack and cool.  They must be cool before you cut them.  

Slice potatoes into cubes.  

Place in a large bowl.  

Sprinkle with sea salt, pepper, cayenne pepper. 

Add 1 Tbsp per person of the dressing.  (If you are serving 4 people, add 4 tablespoons of dressing.)

Toss the ingredients lightly so as not to mush up the potatoes. 

Sprinkle with more cayenne or black pepper to garnish. 

Done!

You can add diced red onions and fresh green herbs to this herbalicious recipe if you like. But the above is the quick and easy version. 

You can serve this salad warm or cold. I prefer it warmed.
