Supper Mexicano
This is an easy and inexpensive meal to soothe the soul during COVID quarantine or any time!
Just pop open a can of black or pinto beans, drain and stir it into 2 cups of beefless broth. Warm the bean sopa and top with vegan sour cream, homemade cashew sour cream or just regular ole dairy sour cream, sliced cherry tomatoes, and a heap of fresh herbs. I like dill and cilantro on mine!
This recipe easily doubles or triples for a family meal. It's also good served chilled like a gazpacho! YUMMY!
