Vegetarian Buddha Bowl

This is a lovely filling dinner I made to fuel my post workout recovery tonight. 
Streamed organic kale on one side seasoned with salt and cayenne pepper and a drizzle of olive oil. 
On the other side: Yellow rice topped with pinto beans, chili tomato blend, lettuce, guacmole, vegan sour cream and pico de gallo. Seasoned with Cajun spice and cayenne. 

This was so easy.  I used used canned organics and store bought ingredients for most of the dish.  Frozen bagged organic kale for the greens. 

Yum yum yum!!! Did I say yum?!!!
